When you travel to classes, retreats or Sit 'n Sews with your cutting mat, is it awkward to transport? It is too big for your tote bags? Are you worried about warping or breaking it? Olfa has developed a wonderful folding cutting mat! The scalloped sides nest seamlessly together and the non-skid back provides stability. It opens to 12" x 17" which is a perfect size for most take-along projects, and it's a convenient 12" x 8" when folded ~ great for a cutting mat next to your machine, and perfect for easy transport!!

Saturday, April 1 10-5 Class fee $40 Kit Fee $79.95
EMBROIDERY CLUB ~ Several years ago we had a monthly machine embroidery club we call JEF Club (Janome Embroidery Friends). It was open to all brands of embroidery machine, as long as the club member knew how to use her machine. I've been hearing requests that we bring this back, sew I'm putting it out to all of you for feedback. Fee would be $10/month and each month the club would work on a project. It could be a block-a-month type project, or just small projects.....your decision. I'd like to know if there is interest in this, what day would work best for those who want to join, and what kind of projects you'd like to work on. The fun thing about a 'club' format is the camaraderie that is formed, and the sharing from all the members. Everyone learns sew much more from a dedicated group than just one instructor alone. Edlyn would be the instructor, but everyone participates, shares and learns. Opinions?

RECIPES & CLOSING
LEMON CRIPS COOKIES
1 pkg Duncan Hines lemon cake mix
1 cup rice krispies
1/2 cup butter, melted
2 eggs, beaten
1 tsp lemon peel, or lemon juice
Combine all ingredients until well mixed. (dough will be crumbly). Shape into 1" balls. Place 2" apart on ungreased baking sheet. Bake 350* ~ 10-12 min or until set. Cool 1 min. Remove from pan to wire rack and enjoy! Can sprinkle powdered sugar over tops while warm!
4 - 6 boneless, skinless chicken breasts
2 Tbsp. all-purpose flour
4 Tbsp. olive oil
1 clove garlic, finely chopped
1 onion, chopped
2 stalks celery, chopped
1 lemon, zest and juice
1 cup chicken stock
6 Tbsp. capers
1 (14-oz.) can quartered artichoke hearts, packed in water, drained
2 cups sliced fresh mushrooms
Place chicken in a resealable plastic bag. Add flour + salt and pepper and seal. Shake to coat chicken. Heat oil in a large skillet over medium-high heat and add chicken. Cook for 5 minutes on each side, or until browned. Add garlic, onions, celery and mushrooms; cook for 5-7 minutes or until tender. Add lemon juice and zest, broth, capers, and artichoke hearts; cook, turning chicken halfway through, for 18 to 20 minutes, or until chicken is no longer pink in the middle. Serve with rice, quinoa or pasta.
ITALIAN SAUSAGE AND BEAN STEW
1# Sweet Italian Sausage, bulk or link, cut into chunks
1# dry mixed beans ~ or beans of your choice (rinse and drain)
1 large can chicken broth
1 large can diced tomatoes
1 large onion, chunked
2-3 large carrots, peeled and chunked
2-3 ribs celery, chunked
2-3 cloves garlic, minced
4 cups chopped fresh kale, endive or spinach
In Dutch oven, or large soup pot, saute sausage until nicely browned. Remove sausage to covered bowl or foil and refrigerate until needed. In sausage drippings saute onion, carrots, celery and garlic. To this add all remaining ingredients except reserved sausage. Simmer for 3-4 hours stirring occasionally, until beans are cooked and tender. Using an immersion blender, or a potato masher, 'moosh' the beans to thicken the stew. Don't pulverize everything, but just mash them a bit. Add the sausage back into the stew. At this point, it's best if you can refrigerate the stew overnight or even for a couple days to really develop the flavor. Before serving, bring back up to simmer, add green leafy veggies and cook through. Serve with crusty bread and sour cream and grated Cheddar.

Then the rain came down to soak us,
And now before the eye can focus -
