Pre-heat oven to 425*
1 bunch of asparagus, tough ends broken off, washed and dried
olive oil (a spritzer is perfect for this!)
grated parmesan
kosher salt
coarse pepper
dash of red pepper flakes
In large (very large!) bowl, or casserole, toss together carefully asparagus spears, just a bit of oil, a bit of salt and pepper and red pepper flakes. (Too much oil will make the asparagus soggy. If you don't have a spritzer pour about a capful in your hands, rub them together, then use them to toss the spears.) Generously add grated Parm and then spread in single layer across a jelly roll pan (cookie sheet with sides). Before placing in oven, sprinkle more Parmesan over all. Place in hot oven for 12-15 minutes and eat immediately!!  Yum Yum!
