May 2, 2016: Play Dates & Tiramisu

A week of watching little ones can wear a Gramma out!
But I just love to do it.....it's their cuteness, I've no doubt!
That charming chatter (they're Sew Smart!),
And huge big hugs that melt my heart!
And just because I'm Gramma ~ well, that gives ME all the clout!

May 2, 2016
Hi Friends!
I. GREETING
I was lucky enough to be able to spend most of a week with two of my grands over this past weekend.  Geeze....we had sew much fun!!  I made puzzles (mostly viewing them upside down!) and read stories, and used Play-Doh more than I have in the past, well, the past many years!  One day I took the kids to the Aha Museum in Lancaster, OH.  What a blast that was!!  Totally low-tech and hands-on for kids up to 8 years old! Note to self: must do that again with all the rest of the grands, too! Sunday surprised us by being quite lovely, sew I loaded them up and headed to Chillicothe where all 5 of them got to play together while we celebrated my daughter 'n law's birthday!  Good times.  Now I'm back at work where I can get some rest!!

   It's SPRING!!

ASPARAGUS RISOTTO (serves 4-6)
4 cups chicken broth
2 T olive oil
4 green onions, chopped
1 cup Arborio rice
2 pounds asparagus, ends trimmed and cut into 2-in. pieces
2 T butter
1/2 cup grated Parmesan cheese
In a small saucepan, bring broth to a simmer. Heat oil in a large pot. Add onions and rice and cook, stirring, until rice is browned, about 5 minutes. Stir in broth, 1/2 cup at a time, and cook, stirring constantly until almost all the broth is absorbed before adding more, until rice is al dente, about 20 minutes; add hot water if you need more liquid. About 5 minutes before rice is done, add asparagus, butter, and Parmesan and cook until asparagus is tender-crisp.

1 cup chopped fresh broccoli
1 large onion, chopped
8oz sliced mushrooms
In large bowl mix together ricotta, Parmesan and dressing. In skillet over medium-high heat, saute broccoli, onion and mushrooms in olive oil until tender.  Add these to the ricotta mixture and fold together gently.  Add drained pasta, toss and serve with a sprinkle of grated Parmesan and chopped basil.
