As long as we have no classes or events scheduled we are always happy for the company!!
Do you grow zucchini? Ours are now the size of small dachshunds!
I'm running out of ideas!!  Here are a few goodies for you to try!
    3 c flour
    2 c sugar ( I used about 1 3/4c)
    1 t baking soda
    1/4 t baking powder
    1 t salt
    1 t ground nutmeg
    1/2 t ground cinnamon
1/4 t each, ground ginger, ground cloves, ground cardamom
    3 eggs
    1/2 c unsweetened applesauce
    1/2 c vegetable oil
    2 t vanilla
    2 c zucchini
1 c dried currants or raisins or dates
In a large bowl beat the eggs, applesauce, oil and vanilla. Stir in the flour, sugar, baking soda, baking powder and all of the spices. Fold in the zucchini and dried fruit. Transfer to the 2 loaf pans. Bake at 350 for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
Slice one medium zucchini into 1/2" rounds. Toss zucchini  slices with olive oil, seasoning, salt & pepper and Parmesan cheese. Place on a baking sheet and top with a little more Parmesan cheese. Bake 5 minutes. Turn oven to broil, place pan near the top and broil 3-5 minutes or until cheese is melted and zucchini  is tender crisp.

4 med. zucchini about 1¾ pounds (or section larger zucchini into personal-size boats)

    1 lb. ground chicken

1/2 C Buffalo Wing Sauce (not regular hot sauce)

    1 C shredded mozzarella cheese

Preheat oven to 400*. Spray a 9x13 inch baking dish with cooking spray. Place a large skillet over medium-high heat. Add the chicken and break it apart with a wooden spoon. Cook until chicken is cooked through, stirring occasionally. Remove skillet from heat. Stir in buffalo wing sauce. As the chicken cooks, cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving a ¼ inch thick zucchini boat. Place the zucchini in the baking dish cut-side up. Spoon the chicken mixture into the zucchini boats. Sprinkle the zucchini evenly with the cheese. Cover and bake for 35 minutes.

Note: Try substituting lasagna noodles with zucchini strips. Pat dry before using. Built your favorite lasagna and bake as usual
Try slicing zucchini lengthwise into 3/4" strips. Brush olive oil along both sides of slices. Lightly season. Place on grill over indirect heat. Turn once getting grill marks on both sides. (It helps if you 'oil' your grill grate before cooking. Don't do this AFTER fire is lit!)

" The sun tires of summer and sighs itself into autumn." ~T. Guillemets
"This was one of those perfect days in late summer where the spirit of autumn takes a first stealing flight, like a spy, through the ripening country-side, and, with feigned sympathy for those who droop with August heat, puts her cool cloak of bracing air about leaf and flower and human shoulders." ~Sarah Orne Jewett
