CHOCOLATE PEANUT BUTTER OATMEAL MUFFINS (gluten free/vegan) - June 2016 Mystery

Preheat oven to 350*. 
   Soak 2T chia seeds in 6 T water.  
   In large bowl mash 3 large bananas.  
      1 C almond milk 
      1/4 C peanut butter
      1/4 C maple syrup
      1/2 tsp vanilla extract
  Stir in chia 'eggs'
      1 scoop chocolate protein powder
      3 C old fashioned oats
      2 T cocoa powder
      1 T baking powder
      pinch of salt.
  Spray mini muffin tins.  Spoon batter to top of each cup.  Bake 25 min. Serves 12
