FRANKIE'S YUMMY ZUCCHINI BREAD

FRANKIE'S YUMMY ZUCCHINI BREAD
3 c flour 
2 c sugar ( I used about 1 3/4c) 
1 t baking soda  
1/4 t baking powder 
1 t salt 
1 t ground nutmeg 
1/2 t ground cinnamon 
1/4 t each, ground ginger, ground cloves, ground cardamom 
3 eggs 
1/2 c unsweetened applesauce 
1/2 c vegetable oil 
2 t vanilla 
2 c zucchini 
1 c dried currants or raisins or dates 
   In a large bowl beat the eggs, applesauce, oil and vanilla. Stir in the flour, sugar, baking soda, baking powder and all of the spices. Fold in the zucchini and dried fruit. Transfer to the 2 loaf pans. Bake at 350 for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
