Oven:  375 degrees
Mix below ingredients: (I double recipe since I have 15 oz. can of pumpkin)
1 cup sugar
1 cup pumpkin
½ cup oil
1 egg
Sift together and add to above:
        2 cups flour
        ½ tsp Salt
        1 tsp. Cinnamon
        2 tsp. Baking powder
Dissolve and add to the above ingredients:
1 tsp. baking soda
1 tsp milk
1 tsp vanilla
1 cup chocolate chips     *I use milk chocolate
½ cup nuts      *I omit
Preheat oven to 375 degrees.  Drop on lightly greased cookie sheet.  Bake approximately 10 to 12 minutes. NOTE:  Careful not to overbake. Cookies will be soft and moist.  (I bake for 9 mins.     Makes about 40 cookies at approx. 1.5 inches when doubled.   I use parchment paper.)
